Weekend in Colorado!
On Thursday morning we flew out to Colorado for a weekend of snowboarding at Breckenridge. Unfortunately boyfriend couldn't come since his knee is still hurt. I had to fly by myself since everyone else flew from LA. The guys got there a few minutes before me and a had a welcome sign from Jax :)
We rented a big Suburban and started the 2 hour drive to Breckenridge. We all chipped in for a new snowboard for Jax's birthday - he had no idea ... we snuck the snowboard into his bag while he wasn't looking :)
The conditions were great! It was snowing lightly the whole time we were there so there was plenty of packed powder.

mac n' cheese - first attempt
I tried making mac n' cheese last night based on Alton Brown's recipe. I added more different kinds of cheese, using cheddar, colby jack mix, a little parmesan and 1 baby bell.
It didn't turn out as gooey as I like it so next time I'm gonna try making the bacon mac n' cheese that Jerry made for our Christmas party that he sent me:

This is the recipe I used but I modified it slightly. I added 1 pack of bacon, cayenne powder, 25% more cottage cheese, and 1 diced jalapeno, and one can of fritos jalapeno cheddar cheese dip. And only some parm cheese in the bread crumbs.
Kimchi Stew on a cold night
Last night I was in a cooking mood - it was raining here in San Diego so I made kimchi jige (a spicy stew).
It super easy to make and it's easy to make just a small serving. If I don't have any beef or pork around I just omit it and it still tastes great.
Fry up some meat (I used pork) that's been marinated with soy sauce, sesame oil and cornstarch in the pot.
Then add dashi, a whole bunch of kimchi, firm tofu, and water. I also like to add a teaspoon of Korean soybean paste or Ssamjang Sauce.
Serve with rice.

Puppy Bowl Sunday!
We watched the superbowl at the studio - but I turned on the Puppy Bowl - much more interesting :)
Eric BBQ'd some chicken and I made my spicy peanut noodles.
